  • 2tablespoons canola oil, divided
  • 300grams chicken breasts, skinless, sliced into strips
  • 3tablespoons miso paste
  • 250grams oyster mushrooms, sliced
  • 5centimeters ginger, peeled and sliced into matchsticks
  • 3 cloves garlic, peeled and minced
  • 1.20L chicken stock, made with 2 stock cubes, hot
  • 6 medium spring onions, sliced, tops reserved
  • 400grams egg noodles, fresh
  • 200grams bok choi, shredded
  • 1tablespoons honey (to taste)

Description

This slightly sweet ginger chicken ramen is a bowl of warming comfort food.

Method

Step 1 of 5

Heat half of the oil in a large, deep pan and cook the chicken strips for 4 minutes on each side, remove from the pan and set aside.

Step 2 of 5

Heat the rest of the oil in the pan and cook the mushrooms for 5 minutes until browned. Stir in the garlic, ginger and miso and cook for 2 minutes.

Step 3 of 5

Pour over the stock, bring to the boil and reduce the heat. Simmer for 10 minutes.

Step 4 of 5

Bring the soup back to the boil, add the noodles and bok choi cook for 4 minutes, stir in the spring onions and cook for 2 minutes. Season with honey to taste.

Step 5 of 5

Serve in bowls with chicken and spring onion tops on top.
