  • 1tablespoons canola oil, divided
  • 300grams chicken breasts, skinless, flattened
  • 5centimeters ginger, peeled and sliced into matchsticks
  • 3 cloves garlic, peeled and minced
  • 250grams Oyster mushrooms, sliced
  • 1/2 bunch coriander, fresh, chopped, stalks included
  • 1.20L chicken stock, hot
  • 4 medium spring onions, sliced, tops reserved
  • 300grams egg noodles, fresh
  • 2 heads bok choi, finely sliced
  • 1 medium red chilli, sliced
  • 1tablespoons soy sauce, reduced salt

Description

This speedy chicken ramen is light and flavoursome, perfect for lunch or a light dinner.

Method

Step 1 of 5

Heat a large griddle pan on the highest setting. Brush the chicken breasts on each side with half of the oil and cook for 4 minutes on each side, until cooked through. Remove from the pan and set aside.

Step 2 of 5

Heat the rest of the oil in a deep pan on medium heat and cook the mushrooms for 5 minutes. Stir in the garlic, ginger and coriander stalks and cook for 2 minutes.

Step 3 of 5

Pour over the stock, bring to the boil and reduce the heat. Simmer for 10 minutes.

Step 4 of 5

Bring the soup back to the boil, add the noodles and bok choi and cook for 4 minutes, stir in the spring onions and cook for 2 minutes. Season with soy sauce.

Step 5 of 5

Serve in bowls with sliced chicken, chilli, spring onion tops and fresh coriander scattered on top.
