  • 1tablespoons canola oil, divided
  • 1 large red chilli, thinly sliced
  • 5centimeters ginger, peeled and sliced into matchsticks
  • 3 cloves garlic, peeled and minced
  • 250grams oyster mushrooms, sliced
  • 2tablespoons miso paste
  • 1.20L chicken stock, hot
  • 4 medium spring onions, sliced, tops reserved
  • 300grams egg noodles, fresh
  • 2 heads bok choi, finely sliced
  • 300grams king prawns, peeled, deveined, raw
  • 1tablespoons soy sauce, reduced salt
  • 2tablespoons grapefruit juice, fresh

Description

Grapefruit is the secret ingredient in this zingy prawn ramen.

Method

Step 1 of 4

Heat the oil in a deep pan on medium heat and cook the mushrooms for 5 minutes. Stir in the garlic, ginger and half of the chilli and cook for 2 minutes. Stir in the miso paste and cook for 1 minute.

Step 2 of 4

Pour over the stock, bring to the boil and reduce the heat. Simmer for 10 minutes.

Step 3 of 4

Bring the soup back to the boil, add the noodles and bok choi cook for 4 minutes, stir in the spring onions and prawns and cook for 3-4 minutes until the prawns are cooked through. Season with soy sauce and grapefruit juice to taste.

Step 4 of 4

Serve in bowls with chilli and spring onion tops scattered on top.
