  • 2teaspoons sesame oil
  • 1teaspoons white vinegar
  • 1/4 small cabbage, coarsely chopped
  • 1tablespoons ginger, grated
  • 4 spring onions, sliced
  • 1 bunch broccolini, sliced
  • 400grams udon noodles, cooked
  • 1/3 cup white miso paste
  • 1tablespoons soy sauce
  • 4 eggs

Method

Step 1 of 4

Bring 1.5 litres water to the boil in a large saucepan. Stir in miso paste and ginger and simmer for 5 minutes.

Step 2 of 4

Add broccolini stems and cabbage and simmer for 3 minutes. Add noodles, remaining broccolini and spring onions, reserving some for garnish. Simmer for 2 minutes. Season with soy and sesame oil.

Step 3 of 4

Meanwhile, add vinegar to a saucepan of boiling water. Reduce heat to a fast simmer. Crack an egg into a cup. Stir water to create a whirlpool and slide egg into swirling water. Repeat with a second egg. Simmer eggs for 2-3 minutes until white is firm. Use a slotted spoon to transfer to a plate. Repeat with remaining eggs.

Step 4 of 4

Ladle soup into bowls, top each with an egg and garnish with remaining spring onion.
