  • 3teaspoons sesame oil
  • 2 shallots, thinly sliced
  • 90grams ramen noodles
  • 2tablespoons mirin
  • 2tablespoons soy sauce
  • 100grams silken tofu
  • 200grams portion ocean trout, skin and bones removed
  • 1 clove garlic, crushed
  • 30grams miso soup powder

Method

Step 1 of 6

Heat a non-stick frying pan over medium-high heat.

Step 2 of 6

Brush ocean trout with combined sesame oil and garlic. Cook for 2 minutes each side or until cooked to your liking.

Remove from pan and cool. Drain tofu on paper towel and slice.

Step 4 of 6

Bring 1.5 litres of water, mirin and soy sauce to the boil in a large pan. Add noodles, reduce heat to low and simmer for 5 minutes. Stir in miso powder and remove from heat.

Step 5 of 6

Flake the fish and add to the pan with the tofu and mushrooms.

Step 6 of 6

Stand for 2 minutes then ladle into soup bowls and top with shallots.
