- 1/3 cup red curry paste
- 400milliliter can coconut milk
- 1L salt-reduced chicken stock
- 1 small lime, juiced 2 tsp
- 1/2 cup Amoy light soy sauce
- 1/4 cup brown sugar
- 1 long red chilli, thinly sliced
- 180grams Mama Shrimp (Tom Yum) Flavour instant noodles
- 1 bunch choy sum, coarsely chopped
- 2 spring onions, thinly sliced
- 1/4 cup Doree fried shallots
- 1/4 bunch coriander, leaves picked
Description

Method
Step 1 of 3
Combine paste, milk, stock, lime juice, soy sauce, sugar and half of the chilli in a medium saucepan. Stir in all flavour sachets from noodle packets. Bring to a simmer over medium heat. Simmer for 2 minutes to allow flavours to infuse.
Step 2 of 3
Add noodles and choy sum, and cook for 2 minutes or until noodles have softened.
Step 3 of 3
Divide noodle mixture among bowls. Serve topped with onion, shallots, coriander and remaining chilli.
