15 Ingredients
- 1 piece small ginger
- 2 clove small garlic
- 1teaspoons cooking oil
- 1teaspoons curry paste (thai green or red)
- 1 can coconut milk
- 1L vegetable broth
- 2tablespoons satay paste
- 200grams satay tofu
- 2-3 cup veggies (of your choice we have used broccolini, mushrooms and snow peas)
- 180grams udon noodles
- 1 handful fresh coriander (optional)
- 1 handful peanuts (optional)
- 1tablespoons soy sauce
- 1tablespoons honey
- 1tablespoons lemon juice
Description
Great winter dish to warm you up and get a few extra veggies in.
Instruction tip
Instead of satay paste you can use peanut butter, but then I would recommend to add in more curry paste or other spices.
Method
Step 1 of 4
Finely mince the ginger and garlic. In a large pot heat the oil and add in the ginger and garlic, cook until fragrant.
Add in the curry paste and cook for another minute. Then add in the broth, coconut milk and satay paste. Bring to a boil.
Step 2 of 4
In the meantime, prepare your veggies and cut the tofu into smaller chunks. Fry the tofu and veggies off in a separate pan.
Step 3 of 4
Add in the udon noodles into the soup and cook to package instructions. Add soy sauce, honey and lemon juice into the soup and stir well.
Step 4 of 4
To serve ladle the soup and noodles into a large bowl and add veggies and tofu on top. Garnish with fresh coriander and peanuts (optional).
