  • 300grams prawns, frozen
  • 1.20L chicken stock
  • 4 spring onions, sliced, green tips reserved
  • 2 large red chilli, sliced
  • 150grams chestnut mushrooms, sliced
  • 2 limes, juiced
  • 4tablespoons fish sauce
  • 4teaspoons coconut sugar
  • 100grams pak choi, finely sliced
  • 1 bunch coriander, fresh, chopped

Description

This simple and warming hot and sour soup makes a speedy and tasty lunch or dinner.

Method

Step 1 of 4

Place the frozen prawns in a bowl of cold water for 10 minutes to defrost. Drain and set aside.

Step 2 of 4

Bring the stock to the boil in a large saucepan and stir in the spring onions, chillis, mushrooms, lime juice, fish sauce, coconut sugar and pak choi and cook for 2 minutes.

Step 3 of 4

Tip in the prawns and simmer for 2 minutes or until the prawns are cooked through.

Step 4 of 4

Divide between 4 bowls, top with coriander and serve.
