  • 1 jar Ayam laksa paste
  • 2 tin coconut milk
  • 4 red chillies
  • 1 brown onion
  • 2tablespoons minced ginger
  • 2tablespoons minced garlic
  • 1 bag bean sprouts
  • 500grams white fish balls
  • 500grams seafood extender
  • 500grams raw prawn meat
  • 2 bag noodles (of your choice)
  • 2tablespoons oil (of your choice)
  • 2tablespoons chicken stock powder

Description

This spicy and delicious soup is always a crowd pleaser. It can be easily customised to include any ingredients. We made this one for Good Friday dinner.

This recipe can easily be increased in size to serve a larger crowd

Method

Step 1 of 3

Place oil in large stock pot and put on a medium heat. Finely dice the onion and chilli and add the oil with minced ginger and garlic. Cook for 5 minutes. Add in whole jar or laksa paste and stir well. Cook until fragrant. Prepare a separate pot of water to boil.

Step 2 of 3

Add in both cans of coconut milk, mix well and bring to a simmer. Add in chicken stock powder, turn to low heat and cover for 10 minutes. Add fish balls, turn to medium heat and wait for the laksa to boil and fish balls to cook through.

Step 3 of 3

Whilst the fish balls cook use the separate pot of boiling water to prepare noodles. We used fresh rich noodles, so these were blanched quickly and added to a soup bowl. Cook the prawns and heat the seafood extender and add to bowl. Once fish balls are cooked, ladle the laksa with fish balls into the prepared noodle bowls. Top with bean sprout and enjoy!
