- 150grams frozen sliced green beans
- 2tablespoons coriander leaves (to serve)
- 150grams diced bacon
- 1tablespoons Cajun seasoning
- 410grams crushed tomatoes
- 250grams microwave long-grain rice
- 500grams seafood marinara mix
- 1tablespoons olive oil
- 1 cup frozen peas (corn & carrot)
- 1tablespoons gluten-free plain flour

Method
Step 1 of 3
Heat oil in a large saucepan over high heat. Cook bacon, vegetables and seasoning for 3 minutes or until fragrant. Add flour and stir to coat.
Step 2 of 3
Stir in 3 cups boiling water and tomatoes. Bring to the boil, then reduce heat to medium and simmer, uncovered, for 5 minutes.
Step 3 of 3
Add rice, seafood marinara mix and beans. Simmer, uncovered, for 5-6 minutes or until seafood is just cooked. Season gumbo to taste, scatter over the coriander and serve.
