- 1/3 cup Ayam Thai Red Curry Paste
- 2tablespoons smooth peanut butter
- 270 ml canned Ayam Coconut Cream
- 1 tsp mild paprika
- 1 small lime, juiced (plus wedges to serve)
- 2tablespoons brown sugar
- 1kilograms green banana prawns, peeled, tails left intact, deveined
- 1 bunch bok choy, chopped
- steamed jasmine rice (to serve)
- chopped roasted peanuts (to serve)
- 2tablespoons coriander leaves (to serve)

Looking for an easy dinner that delivers bucketloads of flavour? Try a twist on a classic satay with this creamy oven-baked prawn dish.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced.
Step 2 of 4
Combine paste, peanut butter, coconut cream, paprika, lime juice and sugar in a medium ovenproof frying pan over medium-high heat and bring to the boil. Remove from heat. Add prawns and stir to combine. Bake for 10 minutes or until prawns are cooked through and sauce has thickened slightly.

Meanwhile, cook bok choy in a medium saucepan of boiling water for 3 minutes or until tender. Drain.
Step 4 of 4
Divide prawn mixture, rice and bok choy among plates. Top with peanuts and coriander. Serve with lime wedges.
