- 2 cloves garlic, sliced
- 1teaspoons sesame oil
- 1-2 chillies
- 6 slice fresh ginger
- 1 lemongrass stem, bruised
- 4 spring onions, sliced
- 2 star anise
- 2 cup homemade chicken stock
- 1/2 cup soy sauce
- 1/2 cup shao hsing (Chinese cooking wine)

Combine all ingredients in a saucepan. Bring to a simmer over medium heat for 5 minutes. Allow to cool. Strain, discarding solids, into a bowl.
