Beef & Vegetable Hot Pot

- 1 bunch choy sum, trimmed and cut into short lengths
- 4 spring onions, shredded (to garnish)
- 100grams snow peas, trimmed
- 500milliliter beef stock
- 2tablespoons chilli sauce (to serve)
- 125grams baby corn, halved lengthways
- 1tablespoons soy sauce (to serve)
- 300grams scotch fillet steak
- 150grams mushroom exotic stir-fry mix*
- 3 cup medium grain white rice, steamed (to serve)
Method
Step 1 of 3
Thinly slice steak (see tip). Prepare vegetables, cutting mushrooms, if large. Place all ingredients onto a platter.
Step 2 of 3
Place stock and 2 cups water into a wok and bring to a simmer over medium-high heat.
Step 3 of 3
Using chopsticks, add pieces of meat and vegetables to stock. Cook for 2 minutes, then using a small ladle transfer to serving bowl. Garnish with spring onion and serve with stock, rice and soy or chilli sauce.
