- 500grams chicken breast fillets, thinly sliced
- 2 bunches baby pak choy, halved crossways
- 2 limes, 1 juiced, 1 cut into wedges
- 1 long red chilli, thinly sliced diagonally
- 1/4 bunch coriander, leaves picked

Method
Step 1 of 2
Heat oil in a large saucepan over medium-high heat. Cook paste for 30 seconds or until fragrant. Add 2L water, 5 paste sachets from packets and 2 chilli powder sachets (add more for extra spice) from packets, then bring to the boil over high heat. Reserve any remaining sachets for another use.
Step 2 of 2
Add chicken, pak choy and noodles, and cook for 2 minutes or until chicken and noodles are cooked through. Stir in lime juice. Divide soup among bowls. Top with chilli and coriander.
