- 1tablespoons canola oil
- 6 spring onions, sliced
- 1 medium green chilli, sliced
- 2 cloves garlic, peeled and minced
- 500grams chicken breasts, cut into chunks
- 1.50L chicken stock, hot, made with 2 stock cubes
- 3tablespoons miso paste
- 200grams green cabbage, shredded
- 2 medium carrots, peeled and finely sliced
- 300grams fine egg noodles
- 2 limes, chopped into wedges
Description
This chicken noodle miso soup is warming and comforting.
Method
Step 1 of 3
Heat the oil in a large, deep pan and cook the spring onions, chilli and garlic for 2 minutes. Add the chicken and cook for 5 minutes until browned.
Step 2 of 3
Stir in the miso paste and cook for 2 minutes. Pour over the stock, bring to the boil, add the cabbage and carrots and cook for 5 minutes.
Step 3 of 3
Add the noodles, reduce the heat and simmer for 5 minutes. Serve with lime wedges.
