  • 4 red plums, stones removed, chopped
  • 1/3 cup caster sugar
  • 395grams sweetened condensed milk

Method

Step 1 of 3

Combine sugar and 2 tbs water in a saucepan over medium heat. Bring to a simmer and stir until dissolved. Set aside to cool completely.

Step 2 of 3

Line a freezer-safe container with plastic. Combine cooled syrup, cream, condensed milk and vanilla in a bowl. Pour into lined pan. Freeze for 4 hours or overnight. Meanwhile, place plums into a saucepan with remaining sugar and cup water. Cook over medium heat for 15 minutes or until soft. Cool completely.

Step 3 of 3

Strain plum mixture through a fine sieve and discard solids. Chill until ready to use. Remove frozen mixture from freezer and using the plastic, lift out. Break into pieces and transfer to a food processor. Process until thick and smooth, scraping down sides of the bowl as needed. Return to container. Drizzle over the plum syrup and swirl though. Freeze for 4 hours or overnight. Scoop into bowls to serve.
