- 450grams mixed summer berries, such as strawberries, blackberries, raspberries, and redcurrants
- 2/3 cup crème de cassis
- 3/4 cup double cream
- 1tablespoons fresh mint leaves, finely chopped
- 1-2tablespoons elderflower cordial, depending on taste

Method
Step 1 of 2
Put the berries in a shallow serving dish, pour over the cassis or sweet wine, then chill for 30 minutes, or overnight, stirring now and again.
Step 2 of 2
Put the cream in a mixing bowl and whisk with an electric hand whisk until soft peaks form. Fold in the mint and elderflower cordial, and serve with the berries.
