  • 80grams mango flesh, pureed
  • 8 waffle cones
  • 15grams golden caster sugar
  • 40grams macadamias
  • 40grams brioche, torn into large pieces

Method

Step 1 of 2

Preheat oven to 180°C. Line a tray with baking paper. Process brioche, macadamias and sugar in a food processor until it resembles coarse crumbs. Place in single layer on prepared tray. Bake for 10 minutes, tossing regularly, until golden. Cool completely.

Step 2 of 2

Scoop ice-cream into waffle baskets. Drizzle with mango and sprinkle with macadamia crumbs. Serve.
