Mango & Vanilla Ice-Cream

6 Ingredients

  • 600milliliter light thickened cream
  • 2 large mangoes
  • 1 lime rind, juiced and wedges
  • 1/2 cup caster sugar
  • 1teaspoons vanilla extract
  • 250grams sweetened condensed milk

Method

Step 1 of 5

Line a 6-cup loaf pan with a double layer of plastic wrap, leaving sides to overhang. Place into freezer to chill.

Step 2 of 5

Place sugar, 1/2 cup water and lime rind into a saucepan and stir over medium-high heat until sugar has dissolved. Boil for 5 minutes until syrupy. Cool.

Step 3 of 5

Cut cheeks from mangoes and scoop flesh into a food processor. Process until smooth. Add lime juice and 1 cup of the sugar syrup and process until combined. Pour into base of the loaf pan. Freeze for at least 1 hour until starting to set.

Step 4 of 5

Place creams, condensed milk and vanilla into a food processor and process until thick and creamy. Gently pour over mango layer and cover with overhanging plastic. Freeze overnight.

Step 5 of 5

Briefly dip pan into hot water to loosen. Lift ice-cream out using the plastic and turn onto a large plate. Cut into pieces and serve with slices of lime and mango wedges. Note: Frozen or canned mango can also be used instead of fresh.
