  • 2 large mangoes
  • 4 fresh passionfruit
  • 2 egg whites
  • 1/4 cup caster sugar
  • 300grams low-fat vanilla yoghurt

Method

Step 1 of 5

Cut the cheeks off each side of each mango. Scoop out flesh using a large spoon. Slice flesh into strips or cubes.

Step 2 of 5

Halve each passionfruit and scoop out pulp into a small bowl.

Step 3 of 5

Beat egg whites until soft peaks form, gradually add caster sugar and beat until stiff. Fold into yoghurt until smooth.

Step 4 of 5

Spoon some of the mango into each serving glass, top with yoghurt mixture then some of the passionfruit and a few cubes of mango.

Step 5 of 5

Repeat layers.
