- 1 cup white sugar
- 4 sprigs mint
- 1/2 fresh pineapple
- 1 lime, rind finely grated and juiced
- 5 kiwi fruit
- 1/3 cup toasted muesli
- 400grams vanilla yoghurt

Method
Step 1 of 8
Stir sugar and 3/4 cup of water in a small saucepan over medium heat until sugar has dissolved. Bring to the boil, reduce heat and simmer for 10 minutes until thick and syrupy. Remove from heat and add mint. Set aside for 10 minutes.

Meanwhile, peel and finely chop kiwifruit, reserving 4 slices.

Strain sugar syrup and add to kiwifruit with lime rind and juice.

Refrigerate until needed.

Peel, core and dice the pineapple.
Step 6 of 8
Peel and dice the remaining kiwifruit.
Step 7 of 8
Layer pineapple into glasses with kiwifruit sauce, yoghurt and muesli. Finish with diced kiwifruit, yoghurt and muesli and garnish with reserved kiwifruit slices.

Serve immediately.
