- 80grams butter
- 1 large ripe mango
- 2 egg yolks
- 1 cup caster sugar
- 2tablespoons lemon juice

Method
Step 1 of 3
Process mango flesh with egg yolks, cup caster sugar and lemon juice until smooth.
Step 2 of 3
Transfer to a saucepan and stir over medium heat until sugar has dissolved. Add butter, one piece at a time and whisk constantly until mixture thickens.
Step 3 of 3
Pour into small clean jars, seal, label and store in the fridge. Note: Mango butter will keep in the fridge for up to 3 weeks.
