  • 600milliliter fresh cream, whipped
  • 3 fresh mango, 2 flesh removed, 1 sliced to decorate
  • 1 fresh passionfruit (pulp to decorate)
  • 1tablespoons gelatine powder
  • 1 lemon, juiced and zested
  • 1/2 cup caster sugar
  • 400grams mango

Method

Step 1 of 4

In a food processor add fresh mango, canned mango or mango purée, caster sugar, lemon zest and juice and purée until smooth. Set aside.

Step 2 of 4

Dissolve gelatine in the hot water and then add to the puréed mango mix.

Step 3 of 4

Finally add the whipped cream to the mango purée mix and put into a serving bowl and refrigerate overnight.

Step 4 of 4

Slice the remaining mango and arrange on the set mousse. Top with passionfruit pulp and refrigerate until serving.
