Blackcurrant Jelly With Vanilla Cream

- 135grams packet blackcurrant jelly
- 1/3 cup double cream
- 1/4teaspoons vanilla extract
- 2tablespoons icing sugar (sifted)
- 1 leaves fresh mint (to decorate)
- 4 small sprigs blackcurrants (to decorate)
Method
Step 1 of 2
Chop the jelly into small pieces and place in a measuring jug. Pour over 300ml boiling water and stir until the jelly has dissolved. Top up to 600ml with cold water or ice-cubes, stirring until the jelly has dissolved. Divide between 4 serving glasses and chill for at least 4 hours or overnight to set.

Put the cream, vanilla extract, and icing sugar in a bowl and whisk with an electric hand whisk until soft peaks form. Spoon the cream over the jellies, top each dessert with a mint leaf or two and a sprig of blackcurrants (if using), and serve.
