  • 250grams dried medium egg noodles
  • 3tablespoons vegetable oil
  • 2tablespoons sesame seeds
  • 1 piece of fresh root ginger, peeled and finely chopped, 2.5 cm piece
  • 1 clove garlic , crushed
  • 20 raw peeled king prawns
  • 3tablespoons light soy sauce
  • 2tablespoons sweet chilli sauce
  • 2 heads pak choi, leaves separated

Description

This noodles with prawns recipe fuses juicy seafood with Asian veggies in a Chinese-inspired sweet chilli sauce. On the table in 15 minutes, this is one to have on rotation.

Method

Step 1 of 4

Cook the noodles in a large saucepan of boiling water for about 4 minutes, or according to the packet instructions, until just tender. Drain and set aside.

Step 2 of 4

Add 2 tablespoons of the vegetable oil to a large nonstick frying pan and heat until almost smoking. Add the noodles so that they cover the bottom of the pan. Cook for about 3-4 minutes until golden brown and crispy on the underside. Turn over and cook on the other side until browned. Sprinkle with the sesame seeds.

Heat the remaining vegetable oil in a wok or separate large frying pan, add the ginger and garlic and stir-fry for 1 minute, then add the prawns and stir-fry for 2 minutes until beginning to turn pink. Add the soy sauce and sweet chilli sauce, bring to the boil, then reduce the heat and simmer for 1-2 minutes until the prawns have turned pink. Add the pak choi and cook, stirring, until the leaves wilt.

Place the noodles in large warmed bowls and top with the prawns and pak choi. Sprinkle with the spring onions, drizzle with the sesame oil and serve immediately.
