- 440grams fresh thin egg noodles
- 1 red capsicum, thinly sliced
- 1 carrot, cut into matchsticks
- 3 cm piece ginger, grated
- 8 spring onions, sliced
- 250grams snow peas, trimmed, halved
- 2tablespoons coriander leaves
- chilli sauce (optional, to serve)
- 2tablespoons salt-reduced soy sauce (plus extra to serve)
- 300grams marinated garlic prawns
- 2tablespoons peanut oil
Method
Step 1 of 3
Place snow peas in a large bowl. Place noodles on top. Pour over enough boiling water to cover and set aside.

Meanwhile, heat half the oil in a wok over high heat. Add ginger, spring onion and prawns and stir-fry for 1 minute until heated through. Add carrot and capsicum and cook, tossing frequently, for 2-3 minutes or until just tender. Toss in soy sauce and transfer to a large bowl.

Heat remaining oil in wok. Drain noodles and snow peas and add to wok. Toss for 2 minutes or until heated through. Return prawn mixture to wok and toss well to combine. Serve with coriander leaves, chilli sauce and extra soy sauce.
