  • 1 red capsicum, quartered, thinly sliced
  • 4 cm piece ginger, peeled, finely shredded
  • 150grams small snow peas, trimmed
  • 4 spring onions, thinly sliced diagonally
  • 1/3 cup chicken stock
  • 2tablespoons soy sauce
  • 2 cup jasmine rice, steamed (to serve)
  • 3 garlic cloves, crushed
  • 2tablespoons vegetable oil

Method

Step 1 of 2

Combine stock, soy, sesame oil, cornflour and garlic in a jug. Heat a wok over high heat. Add 1 tbs oil and ginger. Stir-fry ginger for 2 minutes or until golden. Reserve 2 tbs of the spring onion, add remainder to wok with capsicum and stir-fry for 2 minutes or until just tender. Transfer to a bowl.

Reheat wok and remaining oil. Stir-fry prawns in batches for 2 minutes until just cooked. Add sauce and bring mixture to the boil. Return vegetables to wok with snow peas. Cook for 2 minutes or until hot. Spoon rice onto serving plates and top with stir-fry and reserved spring onion.
