  • 24 large green prawns, peeled, deveined
  • 2teaspoons cornflour
  • 1tablespoons fried shallots (to serve)
  • 2tablespoons sesame oil
  • 375grams thin dried egg noodles
  • 2 bunch asparagus, trimmed, cut into 5cm pieces
  • 150grams snow peas, trimmed, shredded
  • 4 green shallots, trimmed, thinly sliced diagonally
  • 1 orange rind, finely grated
  • 1/4 cup salt reduced soy sauce
  • 1tablespoons vegetable oil
  • 1tablespoons brown sugar

Method

Step 1 of 5

Prepare noodles following packet instructions. Drain and set aside.

Step 2 of 5

Combine orange rind, orange juice, soy sauce, brown sugar, sesame oil and cornflour in a bowl.

Heat a wok over high heat. Add vegetable oil and swirl around wok.

Add half the prawns and stir-fry for 2 minutes or until just cooked. Transfer to a plate. Repeat with remaining prawns, adding more oil as required.

Reheat wok, add remaining oil and swirl around pan. Add shallots and asparagus. Stir-fry for 1 minute. Add snow peas and water. Cover and cook for 1 minute. Add prawns, noodles and sauce. Toss until combined. Cook for 2 minutes or until noodles are heated through. Serve topped with the fried shallots. Note: Fried shallots can be found in the Asian aisle at Woolworths. To devein a prawn, use a small sharp knife to make a slit along the middle of the back to expose the dark vein, use your fingers to carefully pull the vein through the opening at the head end to remove.
