- 2 red capsicum, deseeded, cut into strips
- 1tablespoons grated ginger
- 1 onion, cut into wedges
- 150grams snow peas, trimmed and halved
- 1/2 baby wombok, finely shredded
- 1tablespoons hoisin sauce
- 1/4 cup vegetable stock
- 2teaspoons soy sauce
- 500grams pork rashers
- 1 1/4 cup oil (oil for deep frying, save 0.25 cup for later)

Method
Step 1 of 7
Combine stock, hoisin and soy sauce in a bowl. Set aside.
Step 2 of 7
Cut rind from pork rashers and cut into thick strips.
Step 3 of 7
Heat a large wok on a high heat. Add half the pork and stir-fry until golden. Remove and set aside. Repeat with remaining pork.
Step 4 of 7
Add oil and stir-fry onion and ginger for 2 minutes. Add capsicum, snow peas and wombok and stir-fry for 2 minutes.
Step 5 of 7
Return pork to wok and stir in sauce mixture. Toss over heat for 2 minutes or until heated through.
Step 6 of 7
Fry vermicelli noodles in hot oil until puffed.
Step 7 of 7
Serve with stir fry.
