  • 500grams large prawns, peeled and deveined
  • 125grams bacon, lean rindless, cut into small pieces
  • 3 cloves garlic, crushed
  • 1teaspoons fresh ginger root
  • 1 onion, thinly sliced
  • 1 carrot, cut into matchsticks
  • 200grams sugar snap peas
  • 50grams beansprouts
  • 1tablespoons curry powder, medium or hot
  • 6 scallions, thinly sliced diagonally
  • 250grams rice noodles, cooked according to the package directions and drained well
  • 2tablespoons water
  • 6tablespoons dark soy sauce
  • 3tablespoons sweet chilli sauce
  • 2 red chiles, seeded and thinly sliced (to garnish)
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 lime, cut into wedges

Description

This spicy prawn noodles recipe fuses authentic Singaporean flavours with juicy plump seafood, soft noodles and crunchy veggies tossed in a rich Asian sauce. In just 15 minutes you’ll have a delicious family meal on the table.

Method

Step 1 of 4

Spray a large, nonstick wok or skillet with cooking spray and heat over high heat. Add the shrimp and bacon and stir-fry for 4-5 minutes, until the shrimp turn pink and the bacon is golden. Remove and keep warm.

Step 2 of 4

Wipe out the pan with paper towels. Respray with cooking spray and heat over high heat. Add the garlic and ginger and stir-fry for 30 seconds. Add the onion, carrot, sugar snap peas, and bean sprouts and stir-fry for 2-3 minutes, until soft, then add the curry powder and scallions and cook, stirring, for 1 minute.

Step 3 of 4

Add the prepared noodles with the measured water and toss everything together. Stir in the soy sauce and sweet chili sauce, season with salt and black pepper, and stir-fry for another minute. Return the shrimp and bacon to the pan with their juices and toss through the mixture.

Step 4 of 4

Divide the noodle mixture among 4 warm, shallow bowls, sprinkle with the chiles, and serve with lime wedges.
