  • 1tablespoons canola oil
  • 320grams vegetable stir fry mix, pack
  • 250grams soba noodles
  • 2 large red capsicums, thinly sliced
  • 3tablespoons chilli garlic sauce
  • 5centimeters ginger, peeled and grated
  • 2 eggs
  • 200grams prawns, peeled
  • 3tablespoons soy sauce, reduced salt
  • 1tablespoons toasted sesame oil

Description

This spicy prawn and noodle stir fry is tastier and quicker than takeaway.

Method

Step 1 of 4

Cook the soba noodles according to pack instructions, drain well and set aside.

Step 2 of 4

Heat the oil in a wok on high heat, add the mixed vegetables and capsicums and stir fry for 3 minutes. Add the garlic and chilli paste and ginger and cook for 2 minutes.

Step 3 of 4

Heat another pan on medium heat with a drizzle of oil and pour in the eggs. Cook for 30 seconds and add the prawns. Cook for 1 minute to heat through and break up the egg with the back of a spoon.

Step 4 of 4

Pour the soy sauce and sesame oil into the wok, add the noodles, prawns and egg mix and cook for 1 minute, tossing to combine. Divide between 4 bowls and serve with chopped spring onions on top, if desired.
