  • 1/4 cup crunchy peanut butter
  • 1 lime, cut into wedges (to serve)
  • 1tablespoons salt reduced soy sauce
  • 500grams seafood marinara mix
  • 1tablespoons brown sugar

Method

Step 1 of 4

Put beans in a bowl and cover with boiling water. Leave for a few minutes until bright green, then drain and cool in cold water.

Step 2 of 4

Drain beans and toss in a large bowl with cabbage, carrot, bean shoots, shallots and crispy noodles.

Step 3 of 4

Mix peanut butter, soy sauce, sugar and sesame oil in a jug. Add boiling water to thin a little bit and stir until smooth. Heat oil in a non-stick frying pan or wok. Add seafood marinara and cook for a few minutes until golden.

Step 4 of 4

Pile salad onto plates, top with seafood and drizzle with satay dressing. Garnish with coriander and serve with a wedge of lime.
