- 2tablespoons fish sauce
- 2 long red chillies, thinly sliced
- 2 small red chillies, deseeded and finely chopped
- 1 Lebanese cucumber, halved lengthwise, thinly sliced on the diagonal
- 1teaspoons ginger, finely grated
- 1/2 bunch mint, leaves torn
- 4 spring onions, thinly sliced on the diagonal
- 1/3 cup crispy fried shallots (to serve)
- 150grams snowpeas, sliced on the diagonal
- 2tablespoons rice vinegar
- 250grams dried flat rice noodles
- 15grams thai basil, leaves picked
- 1/2 cup lime juice
- 2tablespoons vegetable oil
- 2tablespoons palm sugar
- 2 cup roast chicken meat, shredded
- 2 cloves garlic, finely chopped

Method
Step 1 of 5
For the dressing, combine all ingredients in a jug and whisk well to combine.
Step 2 of 5
Cook noodles according to packet instructions. Drain, rinse under cold running water and drain well. Toss noodles with half of the dressing.

Blanch snowpeas in boiling water for 30 seconds, drain and refresh in cold water. Drain well.
Step 4 of 5
Combine cooled snowpeas with chicken, cucumber, spring onion, herbs and chilli.
Step 5 of 5
Add remaining dressing and toss to combine. Add noodles and mix gently. Transfer to a serving dish and scatter with crispy fried shallots, to serve.
