  • 2tablespoons fish sauce
  • 2 long red chillies, thinly sliced
  • 2 small red chillies, deseeded and finely chopped
  • 1 Lebanese cucumber, halved lengthwise, thinly sliced on the diagonal
  • 1teaspoons ginger, finely grated
  • 1/2 bunch mint, leaves torn
  • 4 spring onions, thinly sliced on the diagonal
  • 1/3 cup crispy fried shallots (to serve)
  • 150grams snowpeas, sliced on the diagonal
  • 2tablespoons rice vinegar
  • 250grams dried flat rice noodles
  • 15grams thai basil, leaves picked
  • 1/2 cup lime juice
  • 2tablespoons vegetable oil
  • 2tablespoons palm sugar
  • 2 cup roast chicken meat, shredded
  • 2 cloves garlic, finely chopped

Method

Step 1 of 5

For the dressing, combine all ingredients in a jug and whisk well to combine.

Step 2 of 5

Cook noodles according to packet instructions. Drain, rinse under cold running water and drain well. Toss noodles with half of the dressing.

Step 3 of 5

Blanch snowpeas in boiling water for 30 seconds, drain and refresh in cold water. Drain well.

Step 4 of 5

Combine cooled snowpeas with chicken, cucumber, spring onion, herbs and chilli.

Step 5 of 5

Add remaining dressing and toss to combine. Add noodles and mix gently. Transfer to a serving dish and scatter with crispy fried shallots, to serve.
