- 2tablespoons fish sauce
- 2 large red chillies, deseeded, finely chopped
- 1/4 cup coriander, leaves
- 3/4 cup mint, leaves
- 6 spring onions, shredded
- 250grams snow peas, trimmed, halved lenthways
- 1 lime, 1/2 cup juiced
- 375grams rice stick noodles
- 250grams baby corn, halved lengthways
- 3tablespoons brown sugar
- 1/4 cup peanuts, roasted, unsalted

Method
Step 1 of 3
Place noodles in a bowl, cover with boiling water and leave for 5-6 minutes to soften.
Step 2 of 3
Cook snow peas in boiling water for 2 minutes or until bright green. Drain, and refresh in cold water. Drain. Transfer to a bowl. Add noodles, baby corn, spring onions and herbs.
Step 3 of 3
Combine lime juice, fish sauce, sugar and chilli in a jug and pour over salad. Toss to combine. Serve with peanuts.
