Instruction tip
Storing tip:
The shortbread bases on these houses make them surprisingly sturdy. Simply place the house on a piece of food-safe clear cellophane, then bring the sides up carefully to enclose. Seal at the top with a ribbon. Alternatively, the houses can also be stored in an airtight container in a cool, dry place.

Method

Step 1 of 4

Cut 4 wafers in half crossways. Melt chocolate melts in a small bowl following packet instructions. Place 1 Scotch Finger, flat-side down, on a clean, flat work surface with the narrow end facing you.

Step 2 of 4

Dip the long side of 1 wafer piece into the melted chocolate. Place at the front of the narrow end facing you. Dip a second wafer piece into the chocolate and place on top of the first piece to make a front wall. Repeat to make a back wall. Repeat again twice more to fill in the side walls, trimming if necessary, dipping the base of the pieces as well as the side where they will meet another wafer piece. Allow 1-2 minutes for each wall to set before adding another. Repeat from step 1 with remaining ingredients to make the second house.

Step 3 of 4

Use remaining wafers to cut 4 triangles to fit at the front and back of both houses. Attach using chocolate, re-melting if necessary. Set aside for 5 minutes to set. Attach 5 chocolate fingers using melted chocolate to make a roof on each house. To attach the final roof pieces, run chocolate down the side of one finger, then press into the side of the house just under the last roof piece, holding it in position for 1 minute until you can feel it set. Repeat with remaining roof pieces.

Step 4 of 4

Transfer icing to a piping bag. Using scissors, make a small cut at the tip. Pipe icing on the houses to decorate. Set aside for 1 hour in a cool, dry place to allow the icing to set. Re-melt the chocolate from step 3. Use chocolate to attach freckles, candy canes and Flake to decorate, trimming the base of the Flake diagonally so it sits flush with the roof. Set aside for 10 minutes to set.
