Process biscuits until coarsely crushed. Transfer to a bowl. Add butter and stir to combine. Spoon among serving glasses.

Step 2 of 2

Whisk cream cheese, cream and sugar in a bowl until firm peaks form. Spoon cream mixture over biscuits in glasses. Top with sauce and pineapple. Serve with mint.
