  • 1 mango
  • 4 passionfruit
  • 300mL Woolworths thickened cream
  • 250grams Woolworths mascarpone cheese
  • 2tablespoons caster sugar
  • 1teaspoons vanilla bean paste
  • 400grams Woolworths jam sponge roll
  • 50grams Woolworths meringue mini kisses
  • 1/4 bunch mint, leaves removed

Description

A tantalising fusion of sweet and tangy flavours, this easy-to-prepare passionfruit and mango roll will transport tastebuds to a tropical paradise.

Method

Step 1 of 4

Using a large sharp knife, cut mango into thin slices. Cut passionfruit into quarters. Set aside.

Step 2 of 4

Using an electric mixer, beat cream, mascarpone cheese, sugar and vanilla in a large bowl until firm peaks form. Transfer mixture to a piping bag fitted with a 1.2cm plain nozzle.

Step 3 of 4

Place sponge roll, seam-side down, onto a serving platter or board. Pipe cream mixture over sponge roll to cover.

Step 4 of 4

Crush 8 meringue kisses. Decorate sponge roll with mango, crushed meringue, remaining meringue kisses, passionfruit and mint. Serve.
