  • 1 long red chilli, chopped
  • 2teaspoons fish sauce
  • 2teaspoons vegetable oil
  • 2 Calypso® mangoes, flesh cut into 1.5cm cubes
  • 1 small red chilli, thinly sliced
  • 1 lime zested, juiced
  • 2tablespoons brown sugar
  • 1/4 bunch mint, leaves removed

Description

A tropical twist on a classic condiment, this sweet, spicy and refreshing mango chilli sambal is perfect for adding a burst of flavour to your favourite dishes.

Serve with pappadums for an easy starter or as an accompaniment to curries or barbecued meats.

Method

Step 1 of 3

Using a small food processor, purée long chilli and fish sauce into a coarse paste.

Step 2 of 3

Heat oil in a small frying pan over medium heat. Add paste and cook, stirring often, for 2 minutes or until fragrant. Transfer to a medium bowl.

Step 3 of 3

Add mango, small chilli, zest, juice and sugar to paste. Stir until well combined. Season. Stir in 1 tbs finely chopped mint. Use immediately or reserve the mint and set aside, covered, in a cool place or the fridge overnight to develop the flavours. Stir in mint to serve.
