  • 2L Woolworths salted caramel ice-cream
  • 40grams Woolworths unsalted pistachio kernels, toasted
  • 100grams dark chocolate, coarsely chopped
  • 350grams Woolworths frozen cherries
  • 250grams raspberries
  • 1teaspoons Woolworths ground cinnamon
  • 1/2 cup Woolworths pure honey

Description

Combining the rich flavours of caramel and berries with a touch of cinnamon honey, this easy-to-make ice-cream loaf is a perfect dessert for Christmas entertaining.

Method

Step 1 of 4

Grease and line a 10x21cm (base) loaf pan with baking paper, extending paper at long sides for handles. Place ice-cream in a large bowl. Stand at room temperature for 10 minutes or until ice-cream softens slightly.

Step 2 of 4

Coarsely chop pistachio. Add chocolate, cherries, half of the raspberries and half of the pistachios to ice-cream. Stir to combine. Spoon into prepared pan. Smooth surface. Cover and freeze for 6 hours or until firm.

Step 3 of 4

Meanwhile, combine cinnamon and honey in a small saucepan and bring to the boil over medium-high heat. Reduce heat and simmer for 2-3 minutes or until fragrant. Cool.

Step 4 of 4

Remove ice-cream from pan. Cut into slices. Top with remaining cherries, remaining raspberries and pistachio. Serve drizzled with cinnamon honey.
