  • 200grams Woolworths Danish-style feta, cubed
  • 2teaspoons Woolworths dried chilli flakes
  • 2 spring onions, thinly sliced
  • 1/2 punnet dill, sprigs picked

Description

The ultimate side dish for your next festive gathering, these crispy smashed potatoes are topped with creamy feta and fresh dill for a delightful combination of flavours and textures.
Instruction tip
Cooking tip :
Keep an eye on potatoes during boiling. Don’t overcook them or they’ll become mash! Tossing the hot potatoes with feta allows the feta to melt slightly and coat the potatoes better.

Method

Step 1 of 3

Preheat oven to 220°C/200°C fan-forced. Grease and line a large baking tray with baking paper. Place potatoes in a large saucepan. Cover with cold water. Bring to the boil over high heat. Boil for 12 minutes or until almost tender when pierced with a skewer. Drain. Cool slightly.

Step 2 of 3

Place a potato on a clean work surface. Using the base of a cup, working in batches, press down slightly to crush potato. Transfer potato to prepared tray. Drizzle with oil and turn to evenly coat. Sprinkle with salt. Roast, turning occasionally, for 40-45 minutes or until golden brown and crispy.

Step 3 of 3

Place potato in a large bowl. Add feta, chilli, onion and dill. Toss to combine. Season with freshly cracked black pepper. Serve.
