- 2tablespoons cornflour
- 200grams Greek-style feta, cut into cubes
- 2tablespoons extra virgin olive oil
- 1 Lebanese cucumber, roughly chopped
- 125grams mini Roma tomatoes, halved
- 1/2 small red onion, thinly sliced
- 1 green capsicum, halved, deseeded, thinly sliced
- 1/4 cup pitted Kalamata olives
- 1/4 cup Greek salad dressing, to serve
Description
Elevate your Greek-style summer salad to new heights with a symphony of exquisite flavours and scrumptious fried feta.
Method
Step 1 of 3
Add cornflour and feta to a medium bowl, tossing to coat feta.
Step 2 of 3
Heat oil in a large frying pan over medium heat. Add feta and cook for 2 minutes or until crispy, then flip and cook on opposite side for 1 minute until evenly golden. Remove feta to a plate lined with paper towels to drain.
Step 3 of 3
Combine feta with remaining ingredients, lightly toss and drizzle over salad dressing to serve.
