- 270grams dried soba noodles
- 200grams snow peas, halved crossways
- 2tablespoons sesame oil
- 1tablespoons vegetable oil
- 450grams Macro perfectly firm tofu, cut into cubes
- 60grams baby spinach leaves
- 1 zucchini, peeled into ribbons
- 1 cup frozen edamame salad, thawed
- 1/4 cup sesame soy sauce Japanese dressing
- 3teaspoons sesame seeds, toasted
Description
Noodles are always a winner! Bring some greens to the party with this easy-to-make, flavourful soba noodle and edamame salad with cubed tofu.

Method
Step 1 of 3
Bring a large saucepan of water to the boil over high heat. Fill a large bowl with cold water. Add a couple of ice cubes. Cook noodles in boiling water for 4 minutes or until tender, adding snow peas in the last 1 minute of cooking. Drain. Add noodles and snow peas to the bowl of iced water.

Heat oils in a large frying pan over medium-high heat. Add tofu. Cook, turning occasionally, for 6 minutes or until golden.
Step 3 of 3
Drain noodles and snow peas well. Transfer to a serving platter. Top with spinach, zucchini, edamame and tofu. Season. Drizzle with dressing. Sprinkle with sesame seeds to serve.
