- 1 1/4 cup plain flour, sifted
- 1L vanilla ice cream
- 125grams butter, softened
- 200grams milk choc bits
- 1 egg
- 1/2 cup brown sugar
- 1/2 cup caster sugar

Step 1 of 4
Preheat oven to 180°C/160°C fan forced. Grease and line 2 baking trays with baking paper.
Step 2 of 4
Using an electric mixer, beat butter, brown sugar and caster sugar until pale and creamy, add egg and beat until just combined. Stir in flour and milk chocolate bits. Mix until well combined.
Step 3 of 4
Roll level tablespoons of mixture into balls; place 4cm apart on prepared trays; gently press down on cookies to flatten slightly. Bake for 12-14 minutes or until golden. Set aside on trays for 5 minutes; transfer to a wire rack to cool completely.
Step 4 of 4
Place a cookie on serving platter, top with 1 scoop of ice-cream. Top with another cookie. Repeat with remaining biscuits and ice-cream.
