- 1/4teaspoons baking powder
- 3/4 cup plain flour
- 80grams butter, chilled, diced
- 2tablespoons icing sugar (for dusting)
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder (plus extra for dusting)
- 1L cookie and cream ice cream, slightly softened
- 1 free range egg, separated using the yolk only
- 1/2 cup brown sugar
Method
Step 1 of 5
Grease a 3cm-deep, 16x26cm (base) lamington pan. Line with baking paper, allowing a 2cm overhang at long ends. Spoon in softened ice cream and smooth over top. Cover and freeze for 4 hours or overnight if time permits.

Put all the chocolate biscuit ingredients into a food processor. Process until dough almost comes together. Turn dough onto a sheet of baking paper and press together. Shape into a rectangle.

Top dough with another sheet of baking paper and roll out until 5mm-thick. Using 7cm round pastry cutter, cut out 12 rounds. Re-rolling as necessary. Place on a large tray lined with baking paper and refrigerate for 15 minutes or until firm. Preheat oven 180°C fan forced.

Bake biscuits for 8-10 minutes until dry to the touch. Cool for 10 minutes, then transfer to a wire rack to cool completely.

Remove ice cream from freezer and fill a small heatproof bowl with hot water. Dip the 7cm round pastry cutter into water and cut out an ice cream filling. Place ice cream on top of one biscuit, sandwich with another biscuit and place on a tray. Repeat with remaining biscuits and ice cream. Transfer tray to the freezer and freeze for at least 30 minutes before serving. Dust with cocoa powder and icing sugar to serve. Tip 1: Replace the cookies and cream ice cream with 1 litre vanilla ice cream. Replace the chocolate biscuit rounds with 310g chocolate chip cookies. Use a round pastry cutter the same size as chocolate chip biscuits, sandwich together and freeze for 10-15 minutes before serving. Tip 2: Replace the chocolate biscuit rounds with ice cream wafers. Tip 3: For an adult version serve the ice cream sandwiches drizzled with warmed chocolate fudge sauce.
