- 1 1/2 cup reduced fat milk

- 2 eggs
- 1/2 cup maple syrup (to serve)
- 1/4 cup caster sugar

Method
Step 1 of 3
Separate eggs, putting the whites into a clean dry bowl and the yolks into the bowl of a food processor or blender.
Step 2 of 3
Add milk, flour, cinnamon, baking powder, sugar and butter and process until smooth and creamy. Beat the egg whites until stiff peaks form then fold into the batter. Eggs need to be beaten in a clean beater.
Step 3 of 3
Heat a waffle maker according to manufacturer's instructions. Spoon 1/2 cup of the mixture into the waffle maker and cook for 2-3 minutes. Remove and keep warm. Serve waffles topped with apple, ice-cream and maple syrup.
