- 3/4 cup maple syrup
- 1/2 cup brown sugar
- 2tablespoons Dijon mustard
- 3 bunch rosemary, finely chopped (save 2 sprigs to serve )
- 4kilograms Woolworths double-smoked half leg ham
Description
Set tongues wagging and mouths watering with this spectacular maple-glazed Christmas ham with rosemary. Pair it with roast veggies and vibrant salads.
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Line a roasting pan with baking paper. Place syrup, sugar, mustard and chopped rosemary in a small bowl. Season generously with pepper. Stir to combine.
Step 2 of 3
Using a small, sharp knife, cut around ham rind, 10cm from shank end. Starting at the opposite end to shank, run your thumb under rind to separate it from fat. Peel back and discard rind. Score fat at 1cm intervals, ensuring not to cut through to the meat. Place ham in pan and wrap shank end in foil.
Step 3 of 3
Brush ham with one-third of the glaze. Bake, basting with remaining glaze every 15 minutes, for 1 hour 15 minutes or until ham is golden and caramelised. Transfer to a platter and rest for 30 minutes. Wrap shank in muslin and string, and decorate with extra rosemary sprigs. Serve.
