Description

Take guacamole to a whole new level by adding juicy, sweet mango pieces to the flavourful Mexican dip.

Method

Step 1 of 3

Halve avocados and deseed. Scoop avocado flesh into a large bowl. Using a fork, mash avocado until almost smooth. Reserve a few coriander leaves for serving. Finely chop remaining leaves. Add chopped coriander and lime juice. Season with pepper. Stir until well combined.

Step 2 of 3

Cut cheeks from mango. Using a large spoon, scoop mango flesh from skin. Place on a chopping board and cut into 1cm cubes. Add mango to avocado mixture and gently stir to combine.

Step 3 of 3

Serve guacamole topped with reserved coriander leaves and with corn chips.
