  • 1 packet spaghetti (or pasta of your choice)
  • 50grams butter, cut into 4 pieces
  • 1teaspoons garlic
  • 1/4teaspoons chilli flakes
  • 8 prawns
  • 1 lemon, zest and juice
  • 30grams butter
  • 2 tbls fresh parsley, finely chopped
  • 1/4 cup parmesan cheese, finely grated

Description

This is how you make a small handful of ingredients go a long way. Perfect for entertaining on a budget, without feeling like you’re on a budget.

Step 1 of 4

Cook the pasta as per the packet instructions until just before al dente.

Step 2 of 4

Meanwhile, heat a small frypan on medium and melt the butter, swirling in the pan until it starts to brown and froth. Quickly swirl through the garlic and then toss in the chilli and prawns to just warm through. Set aside while finishing pasta.

Step 3 of 4

When the pasta is ready, transfer it directly from the cooking water into a large bowl (a little water in the transfer is fine) and add 1⁄4 cup of the hot pasta cooking water to the bowl, along with the lemon juice and zest and the cubes of butter. Use tongs to quickly stir the pasta to create a warm sauce from the lemon, butter and pasta water that coats the pasta and toss through the fresh parsley.

Step 4 of 4

Curl the pasta onto serving plates, dust with finely grated Parmesan and dress with a couple of prawns each before drizzling with the browned garlic chilli butter from the pan.
