- 1 cup green cabbage, shredded
- 1 cup red cabbage, shredded
- 1/2 cup carrot, grated
- 1 granny smith apple, quartered, cored, thinly sliced
- 2tablespoons whole egg mayonnaise
- 1/3 cup basil pesto
- 8 slices leftover roast pork, sliced thin
- 4 ciabatta rolls, split, toasted
Method
Step 1 of 1
Combine green and red cabbage, carrot and mayonnaise in a bowl. Season. Place base of rolls onto serving plates and spoon slaw onto rolls. Top with apple slices, roast pork, crackling and a drizzle of pesto (see tip). Cover filling with roll tops and serve.
