  • 2 handfuls fresh spinach leaves, rinsed
  • 350grams leftover roast chicken, any skinless, cut into bite-sized pieces
  • 50grams pine nuts, toasted
  • 1tablespoons olive oil
  • 1/2 lemon, juice only
  • 2 carrots
  • 2 sweet red eating apples
  • 2 preserved lemons, finely chopped
  • 1 small handful sultanas
  • 1 pinch salt
  • 1 pinch freshly ground black pepper

Method

Step 1 of 2

To make the carrot and apple relish, grate the carrots into a bowl. Quarter and core the apples, and grate into the bowl with the carrot. Add the preserved lemons and sultanas, and mix together. Season with salt and black pepper.

Step 2 of 2

Lay the spinach leaves in a large shallow salad bowl or plate, and top with the leftover chicken and toasted pine nuts. When ready to serve, drizzle over the olive oil and lemon juice, and sprinkle with a pinch of salt. Serve with the carrot and apple relish.
